What's for dinner?

A friend's fig tree is producing more figs than she knows what to with, so today she gifted a bag to me because she knows I love them, so for tonight's dinner...

Fig Pizza with Mission Figs, Bacon, White Corn, Tuscan Kale, caramelized Red Onion, Garlic, Rosemary, Thyme, and Chevre.

Drizzled with pomegranate molasses when it came out of the oven.

Brushed crust with Greek Yogurt, drizzled with olive oil,and sprinkled with grated Italian cheese mix. Sauteed the toppings, other than figs and chevre, in bacon fat before placing on the pizza and popping it in the oven.​

Wow that looks beautiful! The variety of ingredients in not familiar to this Iowan - I've never even had Corn on a Pizza!

Thanks Paige. I got out of the box years ago...and now they won't let me back in. Works out just fine though because I get claustrophobic.

I once had a fig, Brussels sprout, blue cheese dish at a local restaurant that was definitely to die for! Tried to get the recipe from them, but not successful. Been trying (also unsuccessfully) since then to replicate it.

I can see, taste, and put that together in my mind, and yeah it would be delish; although I would probably use gorgonzola.

I have never understood chefs that won't share recipes. A mentor early in my career told me that if I ever got to thinking that I was God's gift to the culinary world with a dish I created...to get over myself, because someone else has done it already. Just like recovery, I learned from others who went before me, culinary is the same.

I'd try your pizza, even if I don't eat junk food at all. I prefer to replace junk food with homemade breast fillets,
chicken casserole, soups, or fish. I will describe my favorite chicken breast fillets. Add olive oil to a preheated saute pan at medium-high temperature. In the heated oil, let the sides of the fillets brown for not more than two minutes. Then add garlic and rosemary. Cook for 1 to 2 minutes until garlic begins to brown. Flip fillets over to brown. Add olives and stir in. Then, add capers. Stir for 1 to 2 minutes, then add white wine. Increase heat for a few minutes to reduce the wine. Reduce heat to medium and add tomato sauce. Stir to combine all ingredients and let sit for a few minutes. Click here to read the explicitly described recipe.

Yeah Betsy, that pizza was a keeper if I do say so myself. Here is a recent kitchen play time

cornbread made using mashed pumpkin seasoned with freshly ground Ceylon cinnamon and allspice, Greek Yogurt, eggs, acorn flour, and cornmeal

arugula tossed with a maple syrup, apple cider vinegar, lemon juice, and olive oil vinaigrette, then sprinkled with sauteed corn, toasted pumpkinseeds, and white beans

chicken breast grilled and basted with a maple syrup, smoked paprika, cracked black pepper, and rosemary glaze

sauce made from corn seasoned with garam masala and freshly grated turmeric, then sauteed before blending into a puree using with two stocks, a reduced corn cob stock and a chicken stock
